Wilbur's


Our first stop, Wilber’s Barbecue, in Goldsboro, NC


As a little background, Carolina BBQ is renowned for its dry cooking and inclusion or exclusion of vinegar. Eastern North Carolina barbecue is typically made by slow roasting the whole pig, chopping it up and then dowsed with a heavy dose of vinegar and spices.

While we had heard about the vinegary BBQ, we really were not ready for the amazing meal we were about to have at Wilbur's.  We ordered Combination Platters of chopped BBQ pork and Chicken smothered their homemade chicken stock gravy, which according to our waitress is "just full of fat".




Also, instead of bread they serve hush puppies with every meal.

 The BBQ was amazing, smokey - due to being slow cooked over Oak, with a hit of vinegar and as the BBQ sauce bottle below says, " It's Spicy Good"


After our meal, we couldn't help ourselves, and had to walk out back to see the smoke house

Here we met the Pit Master, Lima, who was been cooking the BBQ here for the past 32 years.  He shared the secret of their great BBQ, cook up it low and slow over oak for 9 hours with nothing it on it.




Ratings:
BBQ Pork -9 - Amazing, vinegary and spicy
BBQ Chicken -7- good smokey chicken in a think gravy
Coleslaw - 8- tart, tangy vinegar based and finely chopped, went great with the BBQ
Potato Salad - 4 - too much mayonnaise, but a good mustard flavor
Chopped Tomatoes - Anthony ordered this - what an idiot

Memorable Quote:
Shingai - "We are on a BBQ across America to try all the different Varieties"
Waitress - " You mean to tell me there are different types of BBQ; I don't know but any other kind"
Anthony - "Every region has it's own type"
Waitress - "We'll I'll be"

Note: It is really funny to here Shingai re-tell it because our waitress was a very nice southern white woman, but for some reason he gives here a deep, black southern drawl.


Ambiance -8 - it hasn't changed much in the past 50 years including the red and white checkered table cloths and sits right underneath the runway for Seymor Johnston AFB - the first time a jet screamed overhead the "city slickers" ducked for cover while everyone else just kept on eating.


Overall Rating - 8.5
